The saithe / pollock is an excellent food fish and, as with the cod and the haddock, processing methods are varied.
 
Fish Description

The saithe/pollock is a streamlined fish, tall in mid body range but growing narrower towards both ends. The pollock has a medium sized head, and a protruding lower jaw. The saithe/pollock has a blue-grey, or dark-blue, back and lighter toned flanks. The abdominal region is almost white and its mouth is black on the inside. The saithe/pollock is both a demersal and pelagic fish. It can be encountered at various depths, close to the surface or all the way down to about 200 meters, where it is also most commonly found. The saithe/pollock’s food is greatly varied, yet it depends on its size and its immediate environment. Small crabs and larvae, young fish and small fish constitute its most common prey. Unlike other members of the cod family, the saithe/pollock leaves its home grounds and roams distant waters in search of food.
